Veggies 'n Chicken

This has become one of my favorite meals ever.  
It is so simple and totally healthy.

Here's the recipe:
Mixed vegetables (usually frozen)
Chicken 
(Canned, leftover, shredded rotisserie, or pretty much any chicken that you can shred/cube easily)

That's it.

All you do is boil/steam the veggies, (they can be any veggies you want), then transfer the veggies to a skillet and put the chicken in with them, heat for a couple minutes, stir it a few times, and... Done.

It is delicious.

Shredded Chicken Taco Meat

We've started a tradition in our apartment where we have a community dinner (with some of the boys downstairs) every Sunday.
This Sunday, we made Navajo Tacos. Yum!! Sadly, I didn't document the whole thing, but basically, you make big scones, and pile on whatever taco stuff you want.

For our meat, I made some really yummy shredded chicken, totally from scratch.
Here's how:

Boil 4-5 chicken breasts (just on the stove in water), until thoroughly cooked.
While they're boiling, prepare the seasoning.


3 tsp. chili powder
2 1/2 tsp. paprika
2 1/4 tsp. cumin
1 1/4 tsp. onion powder
1/4 tsp. garlic powder
Dash cayenned pepper  (I didn't have any cayenned pepper, so I used some Red Pepper that was in our spice rack. )
(I also added some pepper from a pepper grinder that I have.)

Once the chicken breasts are fully cooked, pull them out and either shred or cube them, then put the chicken in a skillet on medium heat. Add about 1/4 cup of water, and your homemade seasoning, stir together.  Let it fry for a few minutes, until the water in the bottom is gone. 
Put on tacos, add whatever other toppings you'd like, and serve! 

Makes about 10 servings. 



*Note- The batch I made used about 3-1/2 chicken breasts, and I had a little extra seasoning.
